Let your steak rest

Letting your steak rest for 5 minutes may seem like a small thing, but it can make a big difference in the end result. When you cook meat, the fibers contract and the juices are forced to the center. 

If you cut into the steak immediately after cooking, all of those delicious juices will flow out and your steak will be dry and tough. However, if you let the steak rest for 5 minutes before cutting into it, the fibers will have a chance to relax and the juices will be reabsorbed back into the meat.
